Tried & True

I'm always in search of recipes that have stood the test of time, present well (especially for company) are kid friendly, and aren't time consuming. I specifically remember a few favorites that my mom would make. Every year on my birthday I'd ask my mom to make Chicken & Rice. In my opinion, it's as comforting and family friendly as a pot roast or chicken noodle soup. There's also another chicken recipe called Company Chicken....chicken covered in cream sauce and bacon, served over buttered noodles. Umm, yea. Delicious.

I don't happen to have the Company Chicken recipe on me (I'll have to ask for that one) but I've included the Chicken and Rice recipe. I'll also include our favorite CHILI that we've perfected over time and LASAGNA recipe for those cool days around the corner.

Chicken & Rice Casserole

In a large bowl combine:


2 cups rice
1 can cream celery
2 can cream chicken
1 pkg liption onion soup mix
½ cup milk

Pour mixture in a 9X13 pan

Place 3-4 chicken breasts on top, pressing slightly so they sit in the rice. Rub a little bit of left over cream of chicken soup and sprinkle extra Lipton Onion Soup mix. I usually add a little bit of garlic powder, salt, pepper to the rice mixture or over the chicken. 

Cover with foil and bake at 275 for 2 hours.
