Grandma's Shepherd's Pie

Just pulled this out of the oven and it smells FANTASTIC!

Per request:

Grandma's Shepherd's Pie Recipe

Ingredients:

Meat mix:

1 lb ground beef
2 tsp. chili powder
1 pk frozen mixed veggies (thawed)
2 5 oz cans of unsalted tomato sauce
1 tsp. beef bouillon granules or 1 beef bouillon cube
1/2 tsp dried oregano

Topping mix:

1 medium potatoes
1/2 c. sour cream
1/4 tsp. salt
pepper to taste
1 cup shredded cheddar cheese

For topping-
Peel potatoes and cut into 1-inch pieces and boil until soft. Drain all but 2 tbsp. of water (set aside). Add sour cream, salt, pepper and mash until smooth. (I also added italian seasonings and a bit of onion.) If the potatoes are too stiff, add a bit of the reserved potato water. Set aside.

Meat-
Place meat in a large skillet, crumble and cook until no longer pink. Drain. Stir in the tomato sauce, chili powder, oregano, and bouillon. Simmer until heated through and slightly thickened.

Coat 9X13 pan with nonstick spray and spoon beef mixture into dish. Arrange defrosted vegies on top of the beef. Spread mashed potatoes over veggies and top with shredded cheese.

Bale uncovered at 350 for 25 min or until the edges are bubbly and the cheese is melted (slightly browned). Remove from oven and let stand about 5 min before serving.

**Ok, after trying it, I think I simmered away too much of the meat "juice" because it's just a bit dry. So, in retrospect, just warm the whole meat mix, don't really simmer.

14 Weeks and Counting

So, we are 14 weeks along in this pregnancy! Two more weeks to the 4 month mark.....whew!

We have our next ultrasound Monday, October 12th. Can't wait to see how the babies are doing!!!

I haven't had any morning sickness, nausea, or constipation (the three major symptoms of pregnancy)...thank goodness! I have had, however extreme fatigue. There were a couple weeks that all I would do is come home from work, sleep, eat dinner and then go to sleep again!

Baby bump is growing....I have one pair of work pants that I can fit into. Sadly, at this point, I just look like I ate too many cheeseburgers instead of that nice, round belly. I'm sure in a couple months, I'll read this and miss the times I could button any pants at all. Time to go shopping!

Steve's been doing a lot of research (surprise!) about baby gear, pregnancy symptoms, etc. It's helpful to have someone to talk through all of this with. Watch out world! We'll be quite the sight with our backpack diaper bags, huge double stroller, vacant expressions, and spit-up clothes. :)

Well, off to shower for Back to School Night at work. Yah!
