Just pulled this out of the oven and it smells FANTASTIC!
Grandma's Shepherd's Pie Recipe
Ingredients:
Meat mix:
1 lb ground beef
2 tsp. chili powder
1 pk frozen mixed veggies (thawed)
2 5 oz cans of unsalted tomato sauce
1 tsp. beef bouillon granules or 1 beef bouillon cube
1/2 tsp dried oregano
Topping mix:
1 medium potatoes
1/2 c. sour cream
1/4 tsp. salt
pepper to taste
1 cup shredded cheddar cheese
For topping-
Peel potatoes and cut into 1-inch pieces and boil until soft. Drain all but 2 tbsp. of water (set aside). Add sour cream, salt, pepper and mash until smooth. (I also added italian seasonings and a bit of onion.) If the potatoes are too stiff, add a bit of the reserved potato water. Set aside.
Meat-
Place meat in a large skillet, crumble and cook until no longer pink. Drain. Stir in the tomato sauce, chili powder, oregano, and bouillon. Simmer until heated through and slightly thickened.
Coat 9X13 pan with nonstick spray and spoon beef mixture into dish. Arrange defrosted vegies on top of the beef. Spread mashed potatoes over veggies and top with shredded cheese.
Bale uncovered at 350 for 25 min or until the edges are bubbly and the cheese is melted (slightly browned). Remove from oven and let stand about 5 min before serving.
**Ok, after trying it, I think I simmered away too much of the meat "juice" because it's just a bit dry. So, in retrospect, just warm the whole meat mix, don't really simmer.
