You will need the following ingredients:
- Boboli Whole Wheat Thin Pizza Crust (pictured below for those who aren't familiar with this product). I assume any crust like this will do, but I've only ever tried it on this kind.

- 1 Red bell pepper
- 1 Yellow bell pepper
- 1 Broccoli crown
- Extra Virgin Olive Oil
- Shredded cheddar (I prefer Kraft white sharp cheddar cheese)
- Follow the directions on the pizza crust wrapping for preheating the oven
- Chop 1/4 of each bell pepper into small pieces
- Chop a handful of broccoli into small pieces
- Pour olive oil into a tablespoon and slowly drip over the surface of the crust. Be careful to smooth it out with the spoon and not let it pool in one area or the crust will become soggy even after baking.
- Lay a thin layer of shredded cheese on the crust
- Pile veggies to desired thickness on crust
- Top with a sprinkling of salt, pepper, and garlic powder
- Sprinkle cheese (to taste) over the veggies
- Follow directions on pizza crust wrapping for baking...all the cheese should be gooey and melted
- Cool slightly and enjoy
A friend of mine provided the inspiration for this simple meal as she could not tolerate acidic foods (aka pizza sauce). I can even convince Steve to eat this for dinner. :)
